Georgie's Indulgent Chocolate Pudding
This utterly delicious and indulgent pud is a perfect treat for the weekend. Rich, chocolatey and super easy, the whole family will enjoy it. It is also happily gluten free.
125g ground almonds
125g dark chocolate
125g unsalted butter
125g unrefined sugar
1/2 teaspoon of coffee granules diluted in a small amount of warm water (optional)
Pre-heat the oven to 180 degrees C and line and oil a spring form a 20cm wide tin.
Melt the butter and chocolate together in a glass bowl over a saucepan of hot water to ensure it cooks well and doesn’t seize.
Take the chocolate mix off the heat and allow to cool.
In another bowl combine the eggs and sugar and add in the chocolate mix. Finally gently fold through the ground almonds (add the coffee for a richer taste if using).
Pour into the prepared tin and bake in the oven for 15-20 minutes. 15 mins will result in a more gooey centre.
